Frozen Yogurt Raspberry Swirl Pops

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust sweetness according to your preference)

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries

1 tablespoon lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Yogurt Base:

    In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk the ingredients together until the mixture is smooth, creamy, and thoroughly blended. Taste and adjust sweetness if desired.

      Create the Raspberry Swirl:

        In a separate bowl, use a fork to gently mash the raspberries. This allows some of the juice to release while still keeping a few chunks for texture. Add the lemon juice to the raspberries and mix lightly until well combined, but avoid over-mashing to retain some raspberry pieces.

          Layer the Mixtures:

            Begin layering the pops by spooning a generous layer of the yogurt mixture into the bottom of each popsicle mold, filling them about one-third full. Next, add a spoonful of the raspberry mixture on top of the yogurt. Using a toothpick or a skewer, gently swirl the raspberry mixture into the yogurt, creating a beautiful marbled effect. Continue with additional layers of yogurt and raspberry, finishing with a swirl of raspberry on top.

              Insert Sticks and Freeze:

                Carefully place popsicle sticks into the center of each mold, ensuring they stand upright. Transfer the molds to the freezer and allow them to freeze for a minimum of 4 hours, or until they are completely solid.

                  Unmold and Serve:

                    To safely remove the pops from the molds, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull the pops out, taking care not to break them, and arrange them on a plate. For an added touch, garnish with fresh mint leaves for an attractive presentation and refreshing flavor.
