Frozen Yogurt Raspberry Sandwiches

2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups fresh or frozen raspberries, divided

1 cup granola

1/2 cup mini chocolate chips (optional)

12 whole grain cookie wafers or graham crackers

Prepare the Yogurt Mixture: In a mixing bowl, combine 2 cups of Greek yogurt with 1/2 cup of honey (or maple syrup), 1 teaspoon of vanilla extract, and a pinch of salt. Use a whisk to mix until the ingredients are thoroughly blended and smooth.

    Incorporate Raspberries: Carefully fold in 1 1/2 cups of raspberries into the yogurt mixture. Take care to fold gently to maintain the integrity of the berries, creating a beautiful marbling effect while leaving some whole berries intact.

      Assemble the Sandwiches: On a baking sheet, lay out 6 whole grain cookie wafers or graham crackers. Generously spoon the yogurt-raspberry mixture onto each wafer, spreading it out to cover most of the surface. If desired, for an extra touch of sweetness, sprinkle mini chocolate chips over the yogurt filling.

        Create the Sandwiches: Place the remaining cookie wafers or graham crackers on top of the yogurt-filled bases, pressing down gently to ensure they stick well together and form a sandwich.
