2 cups fresh pineapple chunks

1 cup Greek yogurt (plain or vanilla)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjustable to your preferred sweetness)

1 tablespoon freshly squeezed lime juice

Pinch of sea salt

Coconut flakes (optional, for garnish)

Prepare the Pineapple: Begin by placing the fresh pineapple chunks into a blender. Blend until the mixture is completely smooth for a creamy texture, or pulse a few times until some small chunks remain if you prefer a little texture in your pops.

    Mix the Ingredients: In a medium mixing bowl, combine the Greek yogurt with the chia seeds, honey (or maple syrup), freshly squeezed lime juice, and a pinch of sea salt. Use a whisk or spatula to stir until all ingredients are thoroughly blended and creamy.

      Combine and Fold: Gently add the pineapple puree to the yogurt mixture. Use a spatula to fold the two mixtures together softly. Be careful to maintain the bright yellow color of the pineapple—stop mixing as soon as you see a beautiful swirl pattern without fully combining.

        Pour into Molds: Carefully pour the blended mixture into your popsicle molds, filling each one about three-quarters full. This allows enough room for the pops to expand as they freeze.

          Insert Sticks: If your popsicle molds come with lids, secure them on top; if not, insert popsicle sticks straight into the center of each mold.
