Ingredients

2 cups rolled oats

1 cup nuts (choose from almonds, walnuts, or pecans), coarsely chopped

1/2 cup unsweetened cocoa powder

1/2 cup pure maple syrup or honey

1/2 teaspoon sea salt

1 teaspoon vanilla extract

1/2 cup brewed coffee, cooled to room temperature

1 cup Greek yogurt (plain or vanilla)

1/4 cup dark or semi-sweet chocolate chips

1/4 cup mini marshmallows (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, coarsely chopped nuts, cocoa powder, and sea salt. Use a spatula to stir the mixture thoroughly, ensuring the cocoa powder is evenly distributed among the oats and nuts.

Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup (or honey), vanilla extract, and cooled brewed coffee. Mix until the ingredients are well blended and smooth.

Combine Mixtures: Carefully pour the wet mixture over the dry ingredients, using a spatula to fold and mix until all of the oats and nuts are coated evenly.

Bake the Mixture: Spread the granola mixture evenly onto the lined baking sheet. Bake in the preheated oven for 15-20 minutes, or until the edges turn a lovely golden brown. Stir the mixture halfway through baking to achieve even browning.

Cool the Granola: Once baked, remove the baking sheet from the oven and let it cool completely on the sheet. As it cools, the granola will harden.

Form Clusters with Yogurt: After the granola has cooled, break it into clusters of your desired size and transfer them to a mixing bowl.

Add Yogurt: Gently fold in the Greek yogurt, ensuring each cluster is well coated. Don't worry if the mixture feels a little sticky—it adds to the texture!

Add Chocolate Chips and Marshmallows: If desired, fold in chocolate chips and mini marshmallows to introduce pops of sweetness and texture throughout the clusters.

Freeze the Clusters: Using a spoon, scoop dollops of the mixture onto a parchment-lined baking sheet or into silicone molds. Flatten them slightly to form cluster shapes. Place in the freezer for about 2-3 hours, or until the clusters become firm and solid.

Store and Enjoy: Once fully frozen, transfer the clusters to an airtight container and store them in the freezer. Enjoy them as a deliciously refreshing snack straight from the freezer!

Prep Time: 20 minutes | Total Time: 3 hours and 20 minutes | Servings: Approximately 12 clusters

                          - Presentation Tips: Serve clusters in a colorful bowl garnished with a sprinkle of cocoa powder for an added touch, or use them as toppings for yogurt or smoothie bowls for an irresistible treat!
