Ingredients

Granola Cups:

1 ½ cups rolled oats

½ cup mixed nuts (almonds, walnuts, or pecans), coarsely chopped

¼ cup honey or maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

¼ teaspoon sea salt

Frozen Yogurt Filling:

2 cups Greek yogurt (plain or your choice of flavored)

2 tablespoons honey or maple syrup (adjust based on yogurt sweetness preference)

1 teaspoon vanilla extract

Fresh fruit (such as berries, banana slices, or diced mango) for topping

Optional: ¼ cup chocolate chips or additional granola for added crunch

Instructions

Prepare the Granola Cups:

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the rolled oats, chopped nuts, honey (or maple syrup), melted coconut oil, vanilla extract, and sea salt. Stir well until all the ingredients are evenly coated and mixed.

      Shape the Cups:

Lightly grease a muffin tin with cooking spray or a dab of coconut oil. Using your fingers or the back of a spoon, firmly press the granola mixture into the bottom and up the sides of each muffin cup to form a small cup shape.

          Bake the Cups:

Place the muffin tin in the preheated oven and bake for 15 to 20 minutes, or until the granola is golden brown and fragrant. Once done, remove from the oven and allow the cups to cool completely in the tin.

              Make the Yogurt Filling:

In a separate mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until the mixture is smooth and well-combined.

                  Assemble the Cups:

After the granola cups have cooled, gently remove them from the muffin tin by running a butter knife around the edges if necessary. Spoon a generous amount of the yogurt filling into each granola cup.

                      Add Toppings:

Finish each cup by topping with your choice of fresh fruit. For extra crunchy texture, consider sprinkling some chocolate chips or additional granola on top.

                          Freeze:

Place the assembled granola cups in the freezer for approximately 2 to 3 hours, or until the yogurt filling is completely frozen and set.

                              Serve:

When ready to serve, allow the cups to sit at room temperature for about 5 minutes to soften slightly before enjoying. Delight in your deliciously creamy and crunchy Frozen Yogurt Granola Cups!
