Ingredients

4 cups seedless watermelon, cubed

1 tablespoon fresh lime juice

1-2 tablespoons honey or agave syrup (adjust according to your sweetness preference)

1/4 cup coconut water (optional, enhances hydration)

Popsicle sticks

Silicone or paper popsicle molds

Instructions

Prepare the Watermelon: Start by cutting the seedless watermelon into bite-sized cubes. Ensure all seeds are removed. Transfer the watermelon cubes into a blender or food processor for blending.

Blend the Ingredients: Add the fresh lime juice, along with the honey or agave syrup. If you chose to include it, pour in the coconut water as well. Blend everything on high speed until the mixture is completely smooth and well combined, ensuring no chunks remain.

Taste and Adjust: After blending, taste your watermelon mixture. If you prefer it sweeter, gradually add more honey or agave syrup to your liking. Blend again briefly to incorporate any additional sweetener.

Fill the Molds: Carefully pour the luscious watermelon blend into your popsicle molds. Fill each mold just below the rim to leave space for expansion as the mixture freezes.

Insert Sticks: Gently insert a popsicle stick into the center of each filled mold. If the sticks are not staying upright, place the molds in the freezer for about 30 minutes prior to inserting the sticks to help them hold their position.

Freeze: Cover each mold with its lid or tightly wrap them with plastic wrap to prevent any freezer odor from seeping in. Place the molds in the freezer and allow them to freeze for a minimum of 4-6 hours or until they are solid all the way through.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, which will help loosen them. Carefully pull each popsicle out and enjoy the refreshing treat right away!

Storage: If you have some popsicles left over, wrap each one individually with plastic wrap. Store them in an airtight container in the freezer where they can keep for up to 2 weeks.

Prep Time: 10 minutes | Total Time: 4-6 hours | Servings: 8 popsicles

                    - Presentation Tips: Serve the popsicles on a decorative plate or in a tall glass for a beautiful summer display. Consider garnishing with mint leaves or lime wedges for a pop of color!
