2 cups fresh pineapple, diced into small pieces

1 can (13.5 oz) full-fat coconut milk (for a creamy texture)

1 tablespoon honey or maple syrup (adjust based on your desired level of sweetness)

1 teaspoon pure vanilla extract

1/4 teaspoon fine sea salt

1 cup unsweetened shredded coconut (for topping)

Fresh mint leaves (for garnish, optional)

Blend the Base: In a high-speed blender, add the diced fresh pineapple along with the coconut milk, honey (or maple syrup), vanilla extract, and salt. Blend on high until the mixture is completely smooth and creamy, ensuring no chunks remain.

    Prepare Molds: Carefully pour the blended mixture into small cups, popsicle molds, or silicone molds. Leave a small gap at the top of each container to allow for the mixture to expand as it freezes.

      Freeze: Transfer the filled molds into the freezer. Allow them to freeze for a minimum of 4 hours or until they are thoroughly frozen solid.

        Garnish Preparation: When ready to serve, take the molds out of the freezer. For silicone molds, gently press up from the bottom to release the frozen cups. If using rigid cups, run warm water over the outside of the cups to help loosen the frozen mixture.
