Ingredients

2 ripe peaches, peeled and diced

1 cup plain Greek yogurt (or your preferred yogurt)

2 tablespoons honey or maple syrup (adjust for desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: chopped nuts, granola, or shredded coconut

Instructions

Prepare the Peaches: Begin by peeling your ripe peaches and cutting them into small, bite-sized pieces. For an alternative texture, you can blend the peaches into a smooth puree in a blender.

Mix the Yogurt: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir the mixture thoroughly until it's completely smooth, ensuring all the ingredients are well incorporated.

Incorporate Peaches: Gently fold the diced peaches (or the peach puree, if you chose this option) into the yogurt mixture. Make sure the peach pieces are evenly distributed throughout the yogurt.

Determine Portion Size: Take a silicone ice cube tray or a mini muffin tin, and spoon the peach yogurt mixture into each cavity, filling them about three-quarters full. For extra texture and flavor, you can sprinkle a few chopped nuts, granola, or shredded coconut on top of each portion.

Freeze: Carefully place the filled tray in the freezer and let it freeze for a minimum of 4 hours, or until the yogurt bites are completely solid.

Serve: To remove the yogurt bites from the tray, gently press from the bottom or flex the silicone tray. Serve them immediately, or store any leftovers in an airtight container in the freezer where they will keep for up to 2 weeks.

Prep Time, Total Time, Servings: 15 minutes | 4 hours (freezing) | 12-16 bites

Presentation Tips: Arrange the yogurt bites on a decorative plate and garnish with a sprig of mint for a pop of color.
