2 ripe mangoes, peeled and diced into small pieces

1 cup of fresh or frozen pineapple chunks

1/2 cup of canned coconut milk for a creamy texture

2 tablespoons of honey or maple syrup (adjustable based on sweetness preference)

Juice of 1 lime (about 2 tablespoons)

1/2 teaspoon of vanilla extract (optional but adds depth of flavor)

A pinch of sea salt to enhance sweetness

Blend the Fruits: In your blender, combine the diced mango, pineapple chunks, coconut milk, honey (or maple syrup), freshly squeezed lime juice, vanilla extract (if using), and a pinch of sea salt. Blend on high speed until the mixture becomes smooth and creamy—this should take about 30 seconds to 1 minute.

    Taste and Adjust: After blending, taste the mixture to see if it meets your desired sweetness level. If you'd like it sweeter, add a little more honey or maple syrup, then blend again for a few seconds to incorporate any additional sweetener.

      Pour into Molds: Carefully pour the creamy fruit mixture into ice pop molds, being sure to leave a little space at the top of each mold to allow for expansion during freezing. If you don’t have ice pop molds, you can also use small cups, yogurt containers, or even ice cube trays.

        Insert Sticks: If your molds come with sticks, place them in the center of each mold. If using cups or trays, freeze the mixture for about 1-2 hours until it becomes partially firm, then insert wooden sticks so they stand upright.

          Freeze Fully: Transfer the molds to the freezer and allow them to freeze for at least 4-6 hours, or until the pops are completely solid and set.

            Unmold and Serve: To release the pops from their molds, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops. Enjoy them right away for a refreshing treat!

              Store Leftovers: If you have leftover pops, place them in a resealable freezer bag and store in the freezer for a delightful frozen treat later.
