Ingredients

For the crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

1/4 cup unsalted butter, melted

For the cheesecake filling:

1 cup cream cheese, softened to room temperature

1/2 cup powdered sugar

1/2 cup sour cream

1/4 cup fresh lime juice (approximately the juice of 2 limes)

Zest of 1 lime

1 cup mango puree (can use fresh or canned)

1 teaspoon vanilla extract

For the topping:

Whipped cream (store-bought or homemade)

Lime slices (for garnish)

Fresh mango chunks (optional, for extra flair)

Instructions

Prepare the crust:

    - In a medium-sized mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix thoroughly until the mixture resembles wet sand and all the crumbs are evenly coated.

      - Firmly press the crumb mixture into the bottom of individual serving cups or small glasses, ensuring an even layer. Use the back of a spoon or your fingers to pack it tightly. Once done, place the crusts in the freezer to set while you prepare the cheesecake filling (approximately 10-15 minutes).

        Make the cheesecake filling:

          - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it's smooth and creamy. Occasionally scrape down the sides of the bowl for even mixing.

            - Gradually incorporate the powdered sugar, mixing until fully blended.

              - Add the sour cream, fresh lime juice, lime zest, mango puree, and vanilla extract into the bowl. Continue mixing until the filling is creamy and well-combined, again scraping the bowl as necessary.

                Assemble the cups:

                  - Once the crusts are set, remove them from the freezer. Carefully spoon the mango-lime cheesecake filling over the crusts, filling each cup about 3/4 full to leave room for topping.

                    Freeze the cups:

                      - Return the filled cups to the freezer and allow them to set for at least 4 hours, or until completely firm.

                        Serve:

                          - When you're ready to serve, take the frozen cheesecake cups out of the freezer and let them sit at room temperature for about 5 minutes. This helps make removal easier. Top each cup generously with whipped cream, a slice of lime, and fresh mango chunks if desired.

                            Enjoy:

                              - Take a spoon and dive into your delicious creation! These refreshing cheesecake cups are perfect for warm days or as a delightful dessert for any gathering.
