2 ripe mangoes, peeled and diced

1 ½ cups coconut yogurt (dairy-free or regular, as preferred)

1 ripe banana, mashed until smooth

¼ cup honey or maple syrup (adjust sweetness to your preference)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

¼ cup shredded unsweetened coconut

Pinch of salt

Optional garnish: lime zest and extra shredded coconut for decoration

Instructions
 

Blend the Base: In a high-speed blender, combine the diced mangoes, coconut yogurt, mashed banana, honey (or maple syrup), fresh lime juice, and vanilla extract. Blend on high until the mixture is completely smooth and creamy. Taste the blended mixture and add more sweetener if desired for extra sweetness.

    Incorporate Coconut: Gently stir in the shredded coconut and a pinch of salt, ensuring that the coconut is evenly distributed throughout the mixture.

      Prepare the Mold: Line a 9x5 inch loaf pan or a silicone mold with parchment paper, which will facilitate easy removal later. If you're using a silicone mold, there's no need for parchment paper.

        Fill the Mold: Carefully pour the yogurt mixture into your prepared pan, using a spatula to smooth the top for an even finish.

          Freeze: Cover the mold with plastic wrap or a lid to prevent any ice crystals from forming. Place it in the freezer and allow it to freeze for at least 4 hours or until completely solid.

            Cut into Bars: After the mixture is fully frozen, take the pan out of the freezer. If using a loaf pan, lift the frozen yogurt out using the edges of the parchment paper. Use a sharp knife to cut the solidified mixture into bars of your preferred size.

              Garnish and Serve: For an extra touch of tropical flair, sprinkle the bars with lime zest and some extra shredded coconut. Serve immediately for the best texture or store the bars in an airtight container in the freezer for up to two weeks.
