Prepare the Bananas: Start by peeling the ripe bananas. Slice each banana in half crosswise. Carefully insert a popsicle stick into the center of each half, ensuring it's stable. Arrange the banana pops on a baking sheet lined with parchment paper. Freeze them for at least 1 hour, or until they are firm and solid.

    Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat the mixture in the microwave using 30-second intervals, stirring well after each interval until the chocolate is completely melted and becomes smooth in consistency.

      Coat the Bananas: Once the bananas are fully frozen, take them out of the freezer. Dip each banana pop into the melted chocolate, making sure to coat them completely. Allow any excess chocolate to drip back into the bowl.

        Add Toppings: Immediately after dipping, roll or sprinkle the chocolate-coated bananas in your choice of toppings—crushed nuts, shredded coconut, or a delightful combination of both. Ensure each popsicle is evenly covered with toppings for that extra crunch and flavor.

          Final Freeze: Carefully place the decorated pops back onto the parchment-lined baking sheet. Return them to the freezer for an additional 1 to 2 hours, or until the chocolate shell is set and firm to the touch.
