Frozen Blueberry Lemon Bars

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (approximately 2 medium lemons)

Zest from 1 lemon

1/4 cup all-purpose flour

1 cup frozen blueberries

For serving:

Powdered sugar (for dusting)

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the all-purpose flour, granulated sugar, melted butter, and salt. Mix with a spatula until thoroughly combined. Press this mixture firmly and evenly into the bottom of an 8x8-inch baking pan to form a crust. Place in the preheated oven and bake for 15-20 minutes or until the edges turn a beautiful golden brown. Once baked, remove from the oven and allow to cool slightly in the pan.

    Make the lemon filling: In a separate bowl, vigorously whisk the eggs and granulated sugar together until the mixture is smooth and pale. Add in the freshly squeezed lemon juice and lemon zest, whisking until fully incorporated. Sift the 1/4 cup of flour into the mixture, gently stirring until just combined. Carefully fold in the frozen blueberries, ensuring not to crush them.
