Frozen Berries & Oats Breakfast Bark

Ingredients
  

2 cups rolled oats

1 cup mixed frozen berries (blueberries, raspberries, strawberries)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup almond milk (or any milk of your choice)

1/4 cup chia seeds (optional, for added texture)

A pinch of salt

1/2 teaspoon vanilla extract

Optional Toppings: sliced almonds, coconut flakes, or extra fresh berries

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, chia seeds (if using), and a pinch of salt. Stir thoroughly to ensure that the dry ingredients are evenly mixed.

    Mix the Wet Ingredients: In a separate smaller bowl, whisk together the Greek yogurt, honey (or maple syrup), almond milk, and vanilla extract. Continue whisking until the mixture is smooth and well combined.

      Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Gently stir everything together until the oats are thoroughly coated and the mixture is well combined.

        Add the Berries: Carefully fold in the mixed frozen berries, being gentle to avoid crushing them. The aim is to keep the berries largely intact for an appealing appearance.

          Spread on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Transfer the mixture onto the lined sheet and spread it out evenly using a spatula, aiming for a thickness of about 1/2 inch.

            Top It Off: If desired, sprinkle your choice of toppings such as sliced almonds, coconut flakes, or additional fresh berries over the surface of the mixture for added flavor and texture.

              Freeze the Bark: Place the baking sheet in the freezer. Allow the bark to freeze for at least 4 hours, or until it has firmed up completely and is frozen solid.

                Break and Store: Once fully frozen, remove the bark from the baking sheet and break it into pieces of your desired size. Store the pieces in an airtight container in the freezer, using parchment paper between layers to keep them from sticking together.

                  Serve Your Delight: Each morning, grab a piece from the freezer for a quick and nutritious breakfast on the go. Enjoy the bark as is or enhance it with a drizzle of honey or a dollop of yogurt if you wish.
