4 medium-sized zucchini

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 tablespoon balsamic vinegar

1 teaspoon honey or agave syrup

Salt and freshly ground black pepper, to taste

Optional: 1/4 teaspoon crushed red pepper flakes for a spicy kick

Prepare the Zoodles: Using a spiralizer, create noodle-like strands from the zucchini, which will be your zoodles. If you don't have a spiralizer, a vegetable peeler can be used to create long, flat ribbons. Once made, place the zoodles in a colander to draw out excess moisture for about 10 minutes.

    Make the Dressing: In a small mixing bowl, combine the extra virgin olive oil, balsamic vinegar, honey or agave syrup, and a pinch of salt and pepper. If you want a touch of heat, add in the crushed red pepper flakes. Whisk the mixture thoroughly until combined, and taste for seasoning, adjusting as necessary.
