For the Tortilla Chips:

8 corn tortillas, cut into triangles

1 cup vegetable oil (for frying)

Sea salt, to taste

For the Fresh Toppings:

1 cup cherry tomatoes, diced

1 avocado, diced

1 cup black beans, rinsed and drained

1 cup corn (fresh or canned, drained)

1 small red onion, finely chopped

1 small jalapeño, diced (seeds removed for milder taste)

1 cup shredded fresh cilantro

Juice of 2 limes

Salt and pepper, to taste

For the Cheese Sauce:

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/2 cup milk

1 tablespoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

For Serving:

Sour cream

Guacamole

Salsa

Extra fresh cilantro, for garnish

Instructions
 

Prepare the Tortilla Chips:

    - In a deep skillet or fryer, heat the vegetable oil to a temperature of 350°F (175°C).

      - Working in small batches to avoid overcrowding, carefully place the tortilla triangles into the hot oil. Fry them until they are golden brown and crispy, about 2-3 minutes per side.

        - Using a slotted spoon, remove the chips from the oil and let them drain on a plate lined with paper towels. While they are still warm, season with sea salt to enhance the flavor.

          Make the Cheese Sauce:

            - In a medium saucepan set over low heat, combine the grated cheddar cheese, softened cream cheese, and milk. Stir continuously until all the cheeses are fully melted and the mixture is smooth.

              - Once melted, add the taco seasoning, garlic powder, and onion powder. Stir well to combine, keeping the mixture on low heat until you are ready to serve, stirring occasionally to prevent any sticking.
