4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 medium zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

2 cups fresh spinach

Juice of 1 lemon

¼ cup fresh basil, chopped

Grated Parmesan cheese, for garnish (optional)

Prepare the Chicken: Pat the chicken breasts dry with paper towels and place them in a bowl. Sprinkle the garlic powder, onion powder, smoked paprika, salt, and pepper evenly on both sides of the chicken. Rub the seasonings into the meat to ensure even flavor distribution.

    Heat the Skillet: Place a large skillet over medium-high heat and pour in the olive oil. Once the oil shimmers, carefully add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, allowing the chicken to develop a golden-brown crust. Check that the internal temperature reaches 165°F with a meat thermometer.
