1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

4–5 tablespoons ice water

4 ripe peaches, pitted and sliced

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ cup packed brown sugar

1 tablespoon freshly squeezed lemon juice

2 tablespoons cornstarch

1 tablespoon unsalted butter, cut into small pieces

For assembly:

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Prepare the crust: In a medium mixing bowl, whisk together the all-purpose flour, salt, and granulated sugar until well combined. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs, with pea-sized pieces of butter remaining.

    Form the dough: Gradually add the ice water, starting with one tablespoon at a time, mixing gently with a fork until the dough begins to come together. Avoid overworking the dough to keep it tender. Once combined, shape the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour to chill.

      Make the filling: In a large mixing bowl, combine the sliced peaches, ground cinnamon, ground nutmeg, brown sugar, lemon juice, and cornstarch. Gently toss the ingredients together until the peaches are evenly coated. Allow the mixture to sit for about 15 minutes, letting the flavors meld and the juices develop.

        Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

          Roll out the dough: On a lightly floured surface, roll out the chilled dough into a circle approximately 12 inches in diameter. Carefully transfer the rolled-out dough to the prepared baking sheet.

            Assemble the galette: Spoon the peach filling into the center of the rolled-out dough, leaving about a 2-inch border around the edges. Gently fold the edges of the dough over the filling, creating pleats as you work your way around the galette. Dot the peach filling with small pieces of butter for extra richness.
