Ingredients

1 cup rolled oats

1 cup milk (dairy or non-dairy)

2 ripe bananas, mashed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon honey or maple syrup (optional for added sweetness)

Cooking oil or butter for greasing the pan

Optional toppings: sliced bananas, maple syrup, chopped nuts, or chocolate chips

Instructions

Prepare the Oats: Start by placing the rolled oats in a blender or food processor. Blend until the oats reach a fine flour consistency. This oat flour will form the foundation of your pancake batter.

Mix Wet Ingredients: In a large mixing bowl, combine the blended oat flour with the mashed bananas, milk, egg, and vanilla extract. Whisk thoroughly until all ingredients are well blended and the mixture is smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until everything is just combined. If you prefer sweeter pancakes, add honey or maple syrup at this point.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Once hot, lightly grease the surface with a small amount of cooking oil or butter to prevent sticking.

Cook the Pancakes: For each pancake, pour approximately 1/4 cup of batter onto the skillet. Allow the pancakes to cook for about 2-3 minutes, or until bubbles appear on the surface and the edges look slightly firm. Carefully flip the pancake and cook for an additional 1-2 minutes on the opposite side, until golden brown.

Repeat Cooking: Continue the cooking process with the remaining batter. Make sure to re-grease the pan as needed to keep the pancakes from sticking.

Serve Delightfully: Once all the pancakes are cooked, stack them on a plate. Top with your favorite additions such as sliced bananas, a generous drizzle of maple syrup, a sprinkle of nuts, or indulgent chocolate chips for a delightful treat.

Presentation Tips: For a beautiful presentation, layer the pancakes with banana slices in between and drizzle with maple syrup before serving. Add a few chocolate chips on top for a pop of color and extra sweetness!
