1 cup fresh corn kernels (from about 2 ears of corn)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon olive oil

1 cup crumbled feta cheese (or dairy-free alternative)

1/4 cup fresh basil leaves, chopped

1 French baguette or ciabatta loaf, sliced

Fire-Roast the Tomatoes: Begin by preheating your grill or preparing an open flame. Place the whole tomatoes directly over the heat source, turning them occasionally using tongs. Cook until the skins blister and develop a charred appearance, which should take about 5-7 minutes. Once roasted, remove from the heat and allow them to cool slightly. After cooling, peel off the charred skins and roughly chop the tomatoes, setting them aside.

    Cook the Corn: In a medium-sized skillet set over medium heat, add the olive oil. Once the oil is warm, toss in the finely chopped red onion. Sauté for approximately 5 minutes, or until the onion becomes translucent. Then, stir in the minced garlic and smoked paprika, cooking for an additional minute until the garlic is fragrant. Next, incorporate the fresh corn kernels into the skillet and cook for an extra 3-4 minutes, just until the corn is tender but maintains some crunch.

      Combine Ingredients: In a large mixing bowl, combine the fire-roasted chopped tomatoes, sautéed corn and onion mixture, and chopped basil leaves. Season the mixture with salt and freshly cracked pepper according to your taste preferences, then gently stir to combine all the flavors.

        Prepare the Toast: Preheat your oven's broiler to high. Arrange the sliced baguette or ciabatta on a baking sheet in a single layer. Lightly brush or drizzle the slices with olive oil to enhance browning, and place them under the broiler for about 1-2 minutes, watching closely to ensure they become lightly toasted without burning.
