Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (substitute with gluten-free flour for a gluten-free version)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup Sriracha sauce (adjust to preference)

2 tablespoons honey or maple syrup (use maple syrup for a vegan option)

1 tablespoon olive oil

2 tablespoons sesame seeds (optional, for garnish)

Chopped green onions (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Cauliflower: In a spacious mixing bowl, add the cauliflower florets. To this, pour in the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper. Use a spatula to mix everything together until the cauliflower is thoroughly coated and the batter has a smooth consistency.

Bake the Bites: Evenly distribute the batter-coated cauliflower florets on the prepared baking sheet. Place the baking sheet in the oven and bake for 20-25 minutes, or until the cauliflower is golden brown and crispy. Make sure to flip the florets halfway through the baking time for even cooking.

Make the Fiery Sauce: While the cauliflower is baking, prepare the sauce. In a small mixing bowl, combine the Sriracha sauce, honey (or maple syrup), and olive oil. Whisk together until the mixture is smooth and well integrated.

Toss in Sauce: When the cauliflower is done baking, remove it from the oven and carefully transfer it to a large mixing bowl. Pour the prepared Fiery Sriracha sauce over the hot cauliflower, and toss gently to ensure each piece is generously coated with the sauce.

Return to the Oven: Transfer the coated cauliflower florets back to the baking sheet, spreading them out in a single layer again. Place the baking sheet back into the oven for an additional 5-10 minutes. This will help the sauce caramelize slightly, adding a delicious finish.

Garnish and Serve: Once the cauliflower bites are perfectly crisp and caramelized, remove them from the oven. Transfer the bites to a serving platter and garnish with a sprinkle of sesame seeds and chopped green onions. Serve warm, ideally alongside a side of creamy ranch or your favorite dipping sauce for extra flavor.
