2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Zest and juice of 1 lime

Salt and freshly cracked pepper to taste

For the Slaw:

2 cups shredded green cabbage

1 cup shredded carrots

1/2 cup chopped fresh cilantro

1/4 cup red onion, thinly sliced

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and freshly cracked pepper to taste

For Serving:

8 small corn or flour tortillas

Slices of ripe avocado

Lime wedges for squeezing

Extra fresh cilantro leaves for garnish

Instructions

Prepare the Slaw: In a large mixing bowl, combine the shredded cabbage, carrots, chopped cilantro, and thinly sliced red onion. In a separate small bowl, whisk together the apple cider vinegar, honey, and a pinch of salt and pepper to create the dressing. Drizzle this dressing over the slaw and toss well until all the veggies are evenly coated. Set the slaw aside for at least 10 minutes to allow the flavors to meld together.

Season the Shrimp: In a medium mixing bowl, combine the peeled shrimp with olive oil, chili powder, ground cumin, garlic powder, smoked paprika, lime zest, lime juice, and a sprinkle of salt and pepper. Toss until the shrimp are well coated with the spices and seasoning.

Cook the Shrimp: Heat a large skillet over medium-high heat until hot. Add the seasoned shrimp in a single layer, making sure not to overcrowd the pan. Sauté for about 2-3 minutes on one side, or until the shrimp turn pink; flip them over and cook for an additional 1-2 minutes until they are fully cooked and opaque. Once done, remove the skillet from the heat.

Warm the Tortillas: While the shrimp are cooking, warm the tortillas in a dry skillet over medium heat or directly over a flame for a few seconds on each side until soft and pliable. Keep them covered with a clean kitchen towel to stay warm.

Assemble the Tacos: Take a warm tortilla and layer a generous amount of the crunchy slaw down the center. Top with a handful of the cooked shrimp. Add slices of creamy avocado, a squeeze of fresh lime juice, and sprinkle extra cilantro on top as desired.

Serve: Arrange the assembled tacos on a serving platter. Provide lime wedges on the side for an extra zesty touch. Enjoy your meal immediately for the best flavor and texture.
