Ingredients

2 salmon fillets (6 oz each)

1/4 cup teriyaki sauce (store-bought or homemade)

1 cup jasmine rice

2 cups water

1 cup broccoli florets

1 medium carrot, julienned

1/2 cup snap peas

1 tablespoon olive oil

1 tablespoon sesame seeds

2 green onions, sliced

Salt and pepper to taste

Instructions

Marinate the Salmon: In a shallow dish, place the salmon fillets and pour the teriyaki sauce over them, ensuring they're well-coated. Allow the salmon to marinate for at least 15 minutes. For a deeper flavor, marinate for up to 1 hour in the refrigerator.

Cook the Rice: In a medium saucepan, combine the jasmine rice and water. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15 minutes, or until all the water is absorbed. Remove from heat and fluff the rice with a fork.

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Once hot, add the broccoli florets, julienned carrot, and snap peas. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until they are tender-crisp. Season to taste with salt and pepper.

Cook the Salmon: In the same skillet as the vegetables, move them to the side or remove them temporarily. Place the marinated salmon fillets skin-side down in the skillet. Cook for 4-5 minutes on each side, or until the salmon is cooked through and easily flakes apart with a fork.

Assemble the Bowls: For serving, add a generous scoop of jasmine rice to each bowl. Top the rice with a serving of the sautéed vegetables and place a salmon fillet on top. Drizzle any leftover teriyaki sauce over the assembled ingredients for extra flavor.

Garnish and Serve: Finish off the bowls by sprinkling sesame seeds and sliced green onions over each serving. This adds a delightful crunch and freshness. Serve immediately and enjoy your delicious creation!
