Ingredients

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil (divided)

1 large onion, sliced (either yellow or red works well)

1 bell pepper, sliced (choose any color you prefer)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon freshly ground black pepper

Juice of 1 fresh lime

8 small flour or corn tortillas

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, guacamole, salsa

Instructions

Prep the Chicken: In a medium mixing bowl, combine the sliced chicken with 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, salt, and black pepper. Toss thoroughly to ensure the chicken is evenly coated. Allow it to marinate for 10-15 minutes while you prepare the vegetables, enhancing the flavor.

Cook the Vegetables: Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add in the sliced onion and bell pepper. Sauté for approximately 5-7 minutes, stirring occasionally, until the vegetables soften and develop a slight caramelization. Stir in the minced garlic and continue to cook for an additional 1-2 minutes until aromatic. Remove the sautéed vegetables from the skillet and set them aside in a bowl.

Cook the Chicken: Increase the heat to medium-high in the same skillet. Introduce the marinated chicken strips to the pan, ensuring not to overcrowd. Cook for about 5-7 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink in the center.

Combine Ingredients: Once the chicken is cooked, add the sautéed vegetables back into the skillet. Squeeze the juice of the lime over the mixture and stir well to combine. Allow everything to cook together for another minute to warm through and meld the flavors.

Warm the Tortillas: While the chicken and vegetables are finishing, warm the tortillas. This can be done in a dry skillet over medium heat for about 30 seconds on each side or by wrapping them in foil and placing them in a warm oven (set to 200°F or 93°C) until ready to serve.

Serve: To assemble the fajitas, fill each tortilla with a generous portion of the chicken and vegetable mixture. Garnish with freshly chopped cilantro and offer additional toppings such as sour cream, guacamole, or salsa.

Enjoy: Roll up or fold each fajita, taking a moment to savor the delicious burst of flavors in every bite!
