Ingredients

2 cups cooked jasmine rice (preferably chilled)

1 pound shrimp, peeled and deveined

1 cup frozen peas and carrots mix

2 tablespoons vegetable oil

3 cloves garlic, minced

2 large eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 green onions, sliced

Salt and pepper to taste

Instructions

Prepare the Rice: Begin by cooking the jasmine rice according to the package instructions. For the best texture, it is ideal to prepare the rice ahead of time and chill it in the refrigerator for at least 30 minutes. This step helps prevent any mushiness in the final dish.

Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the peeled and deveined shrimp, seasoning lightly with salt and pepper. Sauté for about 2-3 minutes, or until the shrimp are fully cooked, turning pink and opaque. Remove the shrimp from the pan and set them aside.

Scramble the Eggs: In the same pan, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble them over medium heat until fully cooked and set. Once done, transfer the scrambled eggs to the same plate as the shrimp.

Sauté the Vegetables: In the now-empty pan, add the minced garlic, stirring for about 30 seconds until fragrant. Then, incorporate the frozen peas and carrots mix, sautéing for about 2-3 minutes, or until they are warmed through and vibrant in color.

Combine the Ingredients: Add the chilled cooked rice to the pan, using a spatula to break up any clumps. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir-fry the mixture for about 3-4 minutes, ensuring everything is well combined and heated through.

Reintroduce Shrimp and Eggs: Gently fold the cooked shrimp and scrambled eggs back into the rice mixture. Stir until evenly incorporated, and allow everything to cook together for an additional 2 minutes to reheat.

Garnish with Green Onions: Right before serving, stir in the sliced green onions to add a fresh crunch and a pop of color. Taste the dish and adjust the seasoning with more soy sauce, salt, or pepper if necessary.

Serve: Once everything is well-mixed and heated, remove the pan from heat and transfer the Shrimp-tastic Fried Rice to serving plates. Enjoy your delightful meal!
