Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, finely shredded

1 cup mozzarella cheese, finely shredded

2 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper, to taste

1 cup frozen peas, thawed

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish, optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set it aside.

Make the Cheese Sauce: In the same pot, melt the unsalted butter over medium heat. Once the butter is fully melted, sprinkle in the all-purpose flour. Whisk together to create a roux, cooking for about 1-2 minutes until the mixture is bubbly and slightly golden.

Add Milk: Gradually pour in the whole milk while continuously whisking to prevent any lumps from forming. Cook the mixture for about 4-5 minutes, or until it thickens slightly, stirring frequently.

Season the Sauce: Stir in the garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure the spices are evenly distributed throughout the sauce.

Incorporate Cheese: Lower the heat to a gentle simmer and add the shredded sharp cheddar and mozzarella cheeses. Stir continuously until the cheese is completely melted and the sauce is creamy and smooth.

Combine Pasta and Sauce: Gently fold the cooked elbow macaroni and thawed peas into the cheese sauce. Make sure the pasta is thoroughly coated with the cheesy goodness.

Optional Topping: If you’d like a crispy topping, transfer the macaroni and cheese mixture into a greased baking dish. Evenly sprinkle breadcrumbs on top. Broil in the oven for 2-3 minutes until the topping is golden brown and crispy.

Serve: If desired, garnish with freshly chopped parsley before serving. Enjoy your delightful homemade mac & cheese with peas, served warm and cheesy!
