Ingredients

4 ears of fresh corn, husked

1/2 cup unsalted butter, softened at room temperature

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon fresh lime juice

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon cayenne pepper (optional, for an extra kick)

Fresh cilantro or parsley, chopped (for garnish, optional)

Lime wedges (for serving)

Instructions

Prepare the Chili Butter: In a medium mixing bowl, combine the softened butter with the chili powder, smoked paprika, garlic powder, lime juice, salt, and cayenne pepper (if desired). Use a fork or spatula to blend the ingredients together until smooth and creamy. Taste and adjust the seasoning if necessary, ensuring it has a balance of flavors.

Preheat the Grill: Get your grill ready by preheating it to medium-high heat, which should be around 400°F (200°C). This temperature is perfect for achieving a nice char on the corn.

Grill the Corn: Once the grill is hot, carefully place the husked corn directly onto the grill grates. Grill the corn for about 10 to 15 minutes, turning every few minutes to ensure even cooking. The corn should be lightly charred and tender when done.

Apply the Chili Butter: Carefully remove the corn from the grill using tongs. While the corn is still hot, generously slather each ear with the prepared chili butter. Ensure that the butter melts into the corn, covering it completely for maximum flavor.

Garnish and Serve: For an added touch of freshness, sprinkle chopped cilantro or parsley over the grilled corn. Serve with lime wedges on the side, allowing everyone to squeeze additional lime juice over their corn for a zesty finish.
