Ingredients

1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into thin strips

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon oyster sauce (optional, for an extra flavor boost)

1 tablespoon sesame oil

1 tablespoon vegetable oil (or more if needed)

1 bell pepper (any color), sliced into thin strips

1 cup broccoli florets, cut into bite-sized pieces

1 cup snap peas, trimmed

2 cloves garlic, minced

1 inch fresh ginger, peeled and grated

1 medium carrot, julienned (cut into thin strips)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Marinate the Chicken: In a medium bowl, combine the sliced chicken with soy sauce, oyster sauce (if using), and sesame oil. Mix thoroughly to ensure the chicken is well coated. Allow it to marinate for at least 15 minutes while you prepare the vegetables to absorb the flavors.

Prepare the Vegetables: Rinse the bell pepper, broccoli, snap peas, and carrot under cold water. Slice the bell pepper into thin strips, cut the broccoli into bite-sized florets, and julienne the carrot into thin strips. Set the prepared vegetables aside.

Heat the Oil: In a large skillet or wok, add the vegetable oil and heat it over medium-high heat. Once the oil is shimmering, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, ensuring not to burn the garlic.

Cook the Chicken: Add the marinated chicken to the hot skillet. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through, stirring frequently.

Add the Vegetables: Once the chicken is cooked, add the sliced bell pepper, broccoli florets, snap peas, and julienned carrot to the skillet. Stir-fry everything together for an additional 3-5 minutes, allowing the vegetables to become tender yet still crisp.

Serve: Remove the skillet from heat. Serve the flavorful stir-fry over your choice of cooked rice or quinoa. For a beautiful presentation, garnish with chopped green onions and a sprinkle of sesame seeds on top.

              Enjoy Your Delicious Meal!
