Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Juice of 1 lime

8 small corn tortillas

1 cup shredded red cabbage

½ cup diced avocado

½ cup diced tomatoes

¼ cup chopped fresh cilantro

¼ cup sour cream or yogurt (for topping)

Salt and pepper to taste

Instructions

Prepare the Shrimp: In a mixing bowl, combine the peeled shrimp, Cajun seasoning, olive oil, lime juice, salt, and pepper. Toss the shrimp thoroughly to ensure each piece is evenly coated with the seasoning mixture. Let them marinate for about 15 minutes to develop flavor.

Cook the Shrimp: Heat a non-stick skillet over medium heat. Once the skillet is hot, add the marinated shrimp in a single layer. Cook the shrimp for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes, or until they turn pink and opaque. Remove from heat and transfer the shrimp to a plate.

Warm the Tortillas: Using the same skillet, lightly warm the corn tortillas on each side for about 30 seconds until they are soft and pliable. Alternatively, you can wrap the tortillas in a damp paper towel and microwave them for 20-30 seconds for quicker results.

Assemble the Tacos: To build each taco, place a few pieces of the cooked shrimp into the center of each tortilla. Generously top with shredded red cabbage, diced avocado, diced tomatoes, and a sprinkle of chopped cilantro.

Finish Off: Add a dollop of sour cream or yogurt on each taco for a delightful creaminess. If desired, give each taco an extra zesty touch by squeezing a bit more lime juice over the top.

Serve: Present your incredible Cajun shrimp tacos on a platter, and serve them alongside your favorite hot sauce for those who enjoy an extra spicy kick!
