1/2 tsp smoked paprika

2 tbsp olive oil

1/4 cup beef broth (optional, for added flavor)

For the Creamy Avocado Sauce:

1 ripe avocado, halved and pitted

1/4 cup Greek yogurt (or sour cream)

Juice of 1 fresh lime

1 clove garlic, minced

Salt, to taste

Fresh cilantro, chopped (for garnish, optional)

For Serving:

Small corn or flour tortillas (about 8)

1 cup diced tomatoes

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

Salsa of your choice

Lime wedges, for serving

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes, or until the onion is soft and translucent.

      - Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

        - Increase the heat slightly and add the ground beef to the skillet. Use a wooden spoon to break it apart. Cook until the beef is browned and fully cooked, around 5-7 minutes.

          - If there is excess fat, carefully drain it from the skillet. Season the beef mixture with chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.

            - If you chose to use beef broth, pour it in now. Let the mixture simmer for 2-3 minutes, allowing the beef to absorb the flavors of the spices. Remove from heat and set aside.

              Make the Creamy Avocado Sauce:

                - In a blender or food processor, combine the flesh of the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt.

                  - Blend on high until the mixture is smooth and creamy. Taste and adjust the seasoning by adding more salt or lime juice as desired.

                    Assemble the Tacos:

                      - Warm the tortillas in a dry skillet over medium heat or in the microwave until they are pliable and soft.
