Ingredients

1 lb (450g) beef sirloin, thinly sliced into strips

2 tablespoons olive oil, divided

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced (preferably cremini or button)

1 cup beef broth (low sodium)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream, at room temperature

Salt and freshly ground black pepper, to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Add the egg noodles and cook according to the package instructions until al dente. Drain them well and set aside to keep warm.

Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Working in batches to avoid overcrowding, add the thinly sliced beef. Sear the beef for about 2-3 minutes, cooking until a nice brown crust forms on each side. Transfer the cooked beef to a plate and set aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, then sauté for approximately 3-4 minutes until the onion becomes translucent. Incorporate the sliced mushrooms and continue to cook for an additional 5-7 minutes, or until the mushrooms are golden and tender.

Create the Sauce: Pour the beef broth into the skillet, followed by the Worcestershire sauce and Dijon mustard. Stir the mixture well to combine all ingredients and bring it to a gentle simmer, allowing it to thicken slightly.

Combine Beef and Sauce: Once the sauce is simmering, return the seared beef to the skillet. Cook for another 5 minutes, stirring occasionally, so the beef can absorb the flavors of the sauce.

Incorporate Sour Cream: Lower the heat to a gentle simmer. Gradually stir in the sour cream until it combines thoroughly and becomes creamy. Taste and adjust seasoning with salt and freshly ground black pepper as needed.

Mix with Noodles: Gently fold the cooked egg noodles into the beef stroganoff sauce, ensuring that every noodle is coated beautifully in the rich and creamy sauce.

Serve: Plate generous portions of the beef stroganoff and finish with a sprinkle of freshly chopped parsley for a burst of color. Enjoy this comforting dish with your favorite side!
