Easy Beef and Vegetable Stir-Fry in Minutes

1 lb (450g) sirloin beef, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper, sliced (choose any color for extra vibrancy)

1 medium carrot, julienned or thinly sliced

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, finely grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for enhanced flavor)

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 teaspoon sesame oil

Cooked jasmine rice or noodles, for serving

Sesame seeds and sliced green onions for garnish

Marinate the Beef: In a mixing bowl, add the thinly sliced beef and toss with cornstarch. Pour in the soy sauce and oyster sauce (if using), mixing well to coat. Allow to marinate for about 10 minutes while you prepare the vegetables.

    Prepare the Wok: Preheat a large skillet or wok over medium-high heat. Once hot, add the vegetable oil and swirl to evenly coat the bottom of the pan.

      Sear the Beef: Carefully place the marinated beef in a single layer in the skillet. Let it sear without stirring for 2-3 minutes so it develops a golden brown exterior. Stir-fry for an additional minute or until the beef is just cooked through. Remove the beef from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add a splash of oil if necessary. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry everything for approximately 3-4 minutes, or until the vegetables are tender-crisp and vibrant in color.

          Combine & Heat through: Return the cooked beef to the skillet with the veggies. Drizzle in the sesame oil and toss everything together for another minute until heated through. Taste and adjust the seasoning with additional soy sauce if desired.

            Garnish and Serve: Serve the stir-fry over a bed of fluffy jasmine rice or noodles. Top with sesame seeds and freshly chopped green onions for an appealing garnish.
