1 lb ground beef

1 medium onion, finely diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

8 small flour tortillas

2 cups shredded cheddar cheese, divided

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat Your Oven: Begin by preheating the oven to 375°F (190°C) to ensure it’s ready for your enchiladas.

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook for 5-7 minutes, breaking it apart with a spatula, until it’s browned and fully cooked. If there’s excess fat in the skillet, drain it off carefully.

      Sauté the Veggies: Add the finely diced onion and minced garlic to the skillet with the beef. Sauté for approximately 3-4 minutes until the onion is translucent and softened.

        Season the Mixture: Stir in the cumin, chili powder, smoked paprika, salt, and pepper. Mix thoroughly to incorporate the spices evenly. Add the rinsed black beans and corn to the mixture. Cook for an additional 2-3 minutes until everything is heated through and well combined.

          Prepare for Baking: Spread a thin layer of enchilada sauce (about 1/2 cup) on the bottom of a 9x13-inch baking dish. This will prevent the enchiladas from sticking and add flavor.
