Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 large lemon (zest and juice)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

Salt and black pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C), ensuring it is fully heated before placing the salmon in.

Prepare the Marinade: In a small mixing bowl, combine the olive oil, minced garlic, zest of the lemon, lemon juice, fresh thyme, fresh rosemary, salt, and black pepper. Whisk these ingredients together until they are well-blended into a fragrant marinade that will infuse rich flavors into the salmon.

Marinate the Salmon: Take the salmon fillets and place them in a shallow dish or a resealable ziplock bag. Pour the prepared marinade over the salmon, making sure that each fillet is thoroughly coated. Cover the dish or seal the bag, and let the salmon marinate for at least 15 minutes at room temperature. If you have a bit more time, marinate it in the refrigerator for up to 1 hour to deepen the flavors even more.

Prepare for Baking: Line a baking sheet with parchment paper to make cleanup easier. After marinating, arrange the salmon fillets skin-side down on the baking sheet. Drizzle any remaining marinade over the top of each fillet for added flavor.

Bake the Salmon: Place the baking sheet in the preheated oven and bake the salmon for 12-15 minutes. The salmon is done when it flakes easily with a fork and has reached an internal temperature of 145°F (63°C). Keep in mind that the cooking time may vary slightly depending on the thickness of the fillets.

Garnish & Serve: Once the salmon is out of the oven, let it rest for about a minute. Then, garnish the dish with freshly chopped parsley and lemon slices for a vibrant presentation. This zesty salmon pairs beautifully with a side of steamed vegetables or a crisp green salad for a well-rounded meal.
