Ingredients

2 large cucumbers

8 oz (225g) cream cheese, softened to room temperature

1/2 cup Greek yogurt

2 tablespoons fresh dill, finely chopped

2 tablespoons fresh chives, finely chopped

1 tablespoon fresh parsley, finely chopped

1 tablespoon freshly squeezed lemon juice

1 clove garlic, minced

Salt and pepper, to taste

12 cherry tomatoes, halved (for garnish)

Instructions

Prepare the Cucumbers: Start by washing and drying the cucumbers thoroughly. Cut them into 1-inch thick rounds, and set aside the ends. Using a melon baller or a small spoon, gently scoop out a portion of the center from each cucumber round, creating a small cup—be careful not to cut all the way through the bottom.

Make the Herb Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese and Greek yogurt. Add the chopped dill, chives, parsley, lemon juice, and minced garlic. Use a hand mixer or spatula to blend the mixture until it is smooth and creamy. Taste the filling, and season with salt and pepper according to your preference.

Fill the Cucumber Cups: Using either a small spoon or a piping bag fitted with a star tip (for a decorative touch), carefully fill each cucumber slice with the herb cream cheese mixture, making sure to provide a generous amount.

Garnish: To add a vibrant touch, place a half cherry tomato on top of each filled cucumber cup. This will enhance both the flavor and presentation of your dish.

Chill and Serve: Arrange the filled cucumber cups neatly on a serving platter. Cover and refrigerate for about 15-20 minutes, allowing the flavors to meld and the cream cheese to firm up slightly. Serve these delightful cups chilled as a refreshing appetizer or snack.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 12 cups

              - Presentation Tips: For added flair, you can sprinkle some extra fresh herbs over the filled cucumber cups before serving or place the platter on a bed of leafy greens to enhance the visual appeal.
