Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

2 teaspoons ranch seasoning mix (store-bought or homemade)

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt, to taste

Freshly ground black pepper, to taste

Fresh parsley or dill, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To make cleanup a breeze, line a baking sheet with parchment paper.

Prepare the Chickpeas: After thoroughly rinsing the chickpeas under cold water, spread them out on a clean kitchen towel. Gently pat them dry to remove any excess moisture—this step is vital for achieving that delightful crunch.

Mix the Seasoning: In a small mixing bowl, combine the ranch seasoning mix, garlic powder, onion powder, smoked paprika, salt, and freshly ground black pepper. Whisk them together until the mixture is well-blended and aromatic.

Coat the Chickpeas: In a large mixing bowl, add the dried chickpeas and drizzle the olive oil over them. Toss the chickpeas to ensure they are evenly coated. Next, sprinkle the prepared seasoning mixture over the chickpeas and toss again, ensuring that all the chickpeas are evenly covered with the spices.

Roast the Chickpeas: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them into a single layer for optimal roasting. Place them in the preheated oven and bake for 30-35 minutes. Stir the chickpeas every 10 minutes to promote even roasting. They should turn golden brown and crispy by the end of the baking time.

Cool and Serve: Once the chickpeas are perfectly roasted, take them out of the oven and let them cool for about 5 minutes. They will become even crunchier as they cool down. If desired, garnish with freshly chopped parsley or dill, and enjoy them hot as a crunchy snack or a tasty salad topping.

Storage: If there are any leftovers (which is quite rare!), store the cooled chickpeas in an airtight container. They can stay fresh for up to one week.
