Ingredients

2 cups pecan halves

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/3 cup pure maple syrup

1/4 cup almond butter (or any other nut butter of your choice)

1/4 teaspoon fine sea salt

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon (optional, for added flavor)

1/4 cup mini chocolate chips (optional, for a touch of sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). To make cleanup easier, line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the pecan halves, rolled oats, shredded coconut, and ground cinnamon (if you're using it). Mix thoroughly to ensure all dry ingredients are evenly distributed.

Prepare Wet Mixture: In a small saucepan over low heat, combine the maple syrup, almond butter, and fine sea salt. Stir the mixture constantly for about 2-3 minutes until it becomes smooth and well-blended.

Combine Mixtures: Pour the warm maple mixture over the dry ingredients. Add the pure vanilla extract and mix with a spatula until all the dry ingredients are well coated in the sticky mixture. If you're including chocolate chips, gently fold them in at this stage.

Shape Clusters: Using your hands, scoop out portions of the mixture (approximately 1-2 tablespoons each) and shape them into small clusters. Place these clusters on the prepared baking sheet, ensuring they are spaced apart.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the clusters are golden brown. Keep a close eye on them, as they can go from perfectly toasted to burnt very quickly.

Cool: Once baked, remove the clusters from the oven and allow them to cool completely on the baking sheet. They will firm up as they cool.

Serve and Store: After cooling, enjoy your Crunchy Maple Pecan Clusters as a delightful snack or a quick breakfast option. Store any leftovers in an airtight container at room temperature for up to a week.
