1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for a spicy kick)

Salt and freshly ground black pepper, to taste

For the BBQ Sauce:

1/2 cup BBQ sauce (store-bought or homemade)

1 tablespoon honey or maple syrup (for a vegan option)

For the Wraps:

4 large whole wheat or spinach tortillas

1 cup shredded lettuce (such as romaine or green leaf)

1 medium cucumber, thinly sliced

1 ripe avocado, sliced

Fresh cilantro or parsley, finely chopped, for garnish

Lime wedges, for serving

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

    Prepare the Breading Station: In a medium mixing bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt and pepper. In a separate bowl, pour the buttermilk and set both bowls aside.

      Coat the Cauliflower: Take each cauliflower floret, dip it into the buttermilk, allowing any excess liquid to drip off. Next, coat each floret in the breadcrumb mixture, gently pressing the crumbs onto the florets to ensure they stick well. Arrange the coated florets in a single layer on the prepared baking sheet.
