Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 small onion, finely chopped

3 cloves garlic, minced

1/4 cup fresh parsley, roughly chopped

1/4 cup fresh cilantro, roughly chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon smoked paprika

1/2 teaspoon baking powder

1/4 cup all-purpose flour (or chickpea flour for a gluten-free alternative)

Salt and black pepper, to taste

2 tablespoons olive oil (plus extra for drizzling)

Optional: tahini sauce, for serving

Optional: fresh veggies (such as lettuce, tomato, cucumber) for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and enhance crispiness.

Blend Chickpeas: In a food processor, combine the drained chickpeas, finely chopped onion, minced garlic, parsley, cilantro, cumin, coriander, smoked paprika, baking powder, and a pinch of salt and black pepper. Pulse the mixture until it reaches a coarse consistency, ensuring it can hold together when shaped into balls.

Incorporate Flour: Transfer the mixture from the food processor to a mixing bowl. Gently fold in the flour until fully blended. If the mixture seems too wet, gradually add a little more flour until it is moldable but not sticky.

Shape Balls: With your hands, take small portions of the mixture and form them into balls, approximately 1 inch in diameter. Place each formed ball onto the prepared baking sheet, spacing them evenly.

Drizzle with Oil: Lightly drizzle additional olive oil over the falafel balls. Gently toss them to ensure a good coating, which helps achieve that desired golden and crunchy texture during baking.

Bake: Place the baking sheet in the preheated oven and bake the chickpea delights for 25-30 minutes. Remember to flip them halfway through the baking time to promote even cooking and browning.

Serve: Serve the crispy baked falafel warm, drizzling with tahini sauce for added flavor or wrapping them in pita bread alongside fresh veggies for a delicious meal.
