4 cups green cabbage, finely shredded

2 cups purple cabbage, finely shredded

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed and halved

1/2 cup green onions, sliced (white and green parts)

1/2 cup fresh cilantro, chopped

1/2 cup roasted peanuts, roughly chopped (plus extra for garnish)

For the Dressing:

1/4 cup rice vinegar

1/4 cup low-sodium soy sauce

2 tablespoons sesame oil

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon fresh ginger, grated

1 teaspoon garlic, minced

1 teaspoon chili flakes (adjust according to your heat preference)

Salt and black pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green cabbage, purple cabbage, julienned carrots, thinly sliced red bell pepper, halved snap peas, sliced green onions, and chopped cilantro. Gently toss the ingredients together to ensure an even distribution.

Make the Dressing: In a separate bowl, whisk together the rice vinegar, low-sodium soy sauce, sesame oil, honey or maple syrup, grated ginger, minced garlic, chili flakes, and a pinch of salt and pepper. Whisk until the ingredients are well combined and the mixture is smooth.

Combine: Drizzle the dressing over the vibrant vegetable mixture. Using tongs or spoons, toss everything thoroughly to ensure that all of the vegetables are evenly coated with the dressing.

Add the Crunch: Just prior to serving, gently fold in the roughly chopped roasted peanuts, keeping some aside for garnish. This will help maintain the peanuts' delightful crunch.

Garnish and Serve: Transfer the slaw to a beautiful serving platter or individual bowls. Top with the reserved peanuts for extra texture and aesthetic appeal. Enjoy fresh, or let it chill in the refrigerator for about 30 minutes to enhance the flavor melding!
