Ingredients

4 boneless, skinless chicken breasts

1 can (14.5 oz) diced tomatoes with garlic and olive oil

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, finely chopped

4 cloves garlic, minced

2 cups fresh spinach, chopped

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Instructions

Sauté the Aromatics: In a medium skillet, heat the olive oil over medium heat until shimmering. Add the finely chopped onion and sauté for about 5 minutes or until it becomes translucent and soft. Stir in the minced garlic, cooking for an additional minute until it’s fragrant but not burnt.

Prepare the Chicken: Generously season the chicken breasts with salt and pepper on both sides. Arrange the seasoned chicken at the bottom of your crockpot, ensuring they are laid flat.

Layer the Ingredients: Spoon the sautéed onions and garlic mixture evenly over the top of the chicken. Next, add the can of diced tomatoes along with all of their juices, then pour in the chicken broth. Sprinkle the dried basil and oregano over everything, gently stirring with a spoon to combine without disturbing the chicken too much.

Add Cream and Cheese: Carefully pour the heavy cream over the mixture. Then, sprinkle the grated Parmesan cheese evenly across the top. It's key not to stir at this point; allowing the cream and cheese to rest on top will enhance the melding of flavors as they cook.

Cook: Secure the lid on the crockpot. Cook on the low setting for 6 to 7 hours or on high for 3 to 4 hours. The chicken is done when it's tender and easily shredded with a fork.

Finishing Touches: Around 30 minutes before you’re ready to serve, stir in the freshly chopped spinach. This will wilt into the sauce, adding vibrant color and nutrition. Taste the dish and adjust seasoning with salt and pepper if needed.

Serve: Once the cooking time is complete, you can either shred the chicken into bite-sized pieces using two forks or leave the breasts whole for serving. Serve the creamy tomato basil chicken hot, garnished with fresh basil leaves for a fresh touch. It pairs beautifully over pasta, rice, or alongside crusty bread which is perfect for soaking up that luscious sauce.
