Ingredients

2 lbs boneless, skinless chicken thighs

1 cup chili sauce

1/2 cup honey

1 tablespoon apple cider vinegar

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

8 slider buns

1 cup shredded coleslaw mix

Fresh cilantro leaves, for garnish

Slices of jalapeño (optional, for garnish)

Instructions

Prepare the Chicken: Start by placing the boneless, skinless chicken thighs in the bottom of the crockpot. Ensure they are laid flat, allowing for even cooking throughout the preparation process.

Mix the Sauce: In a medium mixing bowl, combine the chili sauce, honey, apple cider vinegar, Worcestershire sauce, soy sauce, garlic powder, onion powder, smoked paprika, ground cumin, black pepper, and cayenne pepper. Whisk the ingredients together vigorously until the mixture is smooth and well blended.

Coat the Chicken: Pour the sauce mixture over the chicken thighs in the crockpot. Using tongs or a large spoon, coat the chicken thoroughly with the sauce, making sure each piece is evenly covered for maximum flavor.

Cook Low and Slow: Cover the crockpot with its lid. Set it to cook on low for 6-8 hours or on high for 3-4 hours. The chicken is done when it is fully cooked and shreds easily with a fork.

Shred the Chicken: Once the chicken is cooked, carefully transfer it from the crockpot to a cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded chicken back to the crockpot, stirring well to mix with the remaining sauce for enhanced flavor absorption.

Assemble the Sliders: If desired, lightly toast the slider buns under a broiler until golden. On the bottom half of each slider bun, pile a generous serving of the spicy sweet chili chicken. Top with a spoonful of coleslaw mix for a crunchy texture, then place the top half of the bun over the filling.

Garnish: For an added burst of flavor, garnish your sliders with fresh cilantro leaves and optional slices of jalapeño for those who enjoy a spicy kick!

Serve: Arrange the assembled sliders on a large platter for an inviting presentation. Serve them warm with extra sauce on the side for dipping, allowing everyone to customize their flavor experience.
