Ingredients

1 cup fresh jalapeños, seeds removed and finely chopped

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened to room temperature

½ cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 cup Panko breadcrumbs (for extra crunch)

Vegetable oil (for frying)

Instructions

Prepare the Jalapeños: Begin by finely chopping your fresh jalapeños, making sure to remove all seeds to achieve a milder flavor profile. Set the chopped jalapeños aside in a bowl.

Mix the Cheese Filling: In a large mixing bowl, combine the finely chopped jalapeños, shredded sharp cheddar cheese, and softened cream cheese. Use a spatula or fork to thoroughly mix these ingredients until well blended. Season the mixture with garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Mix again until evenly seasoned.

Form the Bites: With clean hands, take about a tablespoon of the jalapeño cheese mixture and roll it into a small ball, roughly 1 inch in diameter. Place each formed bite on a parchment-lined baking sheet. Continue this process until all the mixture has been shaped into bites.

Prepare the Breading Station: Set up a breading station with three shallow bowls: place the all-purpose flour in the first bowl, crack the egg into the second bowl and beat it lightly with a fork, and fill the third bowl with Panko breadcrumbs.

Bread the Jalapeño Bites: Take each cheese ball and first roll it in the flour, ensuring it is fully coated. Next, dip it into the egg wash so it’s well covered, and finally roll it in the breadcrumbs, pressing gently to adhere. Place the breaded bites back onto the baking sheet.

Fry the Bites: In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). Carefully add the breaded jalapeño cheddar bites in batches to avoid overcrowding. Fry them for approximately 3-4 minutes on each side, or until they’re golden brown and crispy all over.

Drain and Cool: Once cooked, use a slotted spoon to remove the bites from the hot oil. Transfer them to a plate lined with paper towels to absorb any excess oil, allowing them to cool slightly.

Serve: Serve the crispy jalapeño cheddar bites warm, accompanied by your favorite dipping sauces such as creamy ranch, zesty guacamole, or tangy salsa for a delightful flavor experience.
