1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

2 large eggs

1/4 cup buttermilk

Vegetable oil, for frying

1/2 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tsp ginger, minced

1 tsp sesame oil (optional)

1 tbsp rice vinegar (optional)

Chopped green onions and sesame seeds for garnish

Prepare the Chicken Coating: In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. This will be your crispy coating mixture. In a separate bowl, whisk together the eggs and buttermilk until well combined, forming your wet dip.
