Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

½ cup all-purpose flour

½ cup cornstarch

1 tsp baking powder

½ tsp salt

½ tsp black pepper

1 large egg, beaten

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Honey Garlic Sauce:

½ cup honey

4 cloves garlic, minced

2 tbsp soy sauce

1 tbsp apple cider vinegar

1 tsp sesame oil

1 tsp crushed red pepper flakes (optional, for heat)

Chopped green onions and sesame seeds for garnish

Instructions

Prepare the Chicken: In a spacious mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined. Add the chicken pieces to the bowl and toss them gently in the flour mixture until each piece is evenly coated and covered in a light dusting.

Batter the Chicken: Take each floured chicken piece and dip it into the beaten egg, allowing any excess egg to drip back into the bowl. Following that, roll each piece in the panko breadcrumbs, ensuring they are thoroughly coated for a crunchy exterior.

Heat the Oil: In a large skillet or deep frying pan, pour in vegetable oil until it reaches a depth of about 1 inch. Heat the oil over medium heat, aiming for a temperature of 350°F (175°C). To check if the oil is hot enough, drop a few breadcrumbs into it; they should sizzle and turn a lovely golden brown.

Fry the Chicken Bites: Carefully add the coated chicken pieces to the sizzling oil in batches, ensuring not to overcrowd the pan, as this will lower the oil temperature. Fry the chicken bites for approximately 4-5 minutes, turning them occasionally until they are golden brown and crispy on all sides. Once cooked, remove them from the oil and place them on a plate lined with paper towels to absorb any excess oil.

Make the Honey Garlic Sauce: In a small saucepan set over medium heat, combine the honey, minced garlic, soy sauce, apple cider vinegar, sesame oil, and optional crushed red pepper flakes. Stir the mixture gently and bring it to a gentle simmer. Allow it to cook for 3-4 minutes, or until the sauce thickens slightly to a syrupy consistency.

Coat the Chicken: Transfer the fried chicken bites to a large mixing bowl and pour the prepared honey garlic sauce over them. Toss the chicken gently to ensure that each piece is thoroughly coated in the sweet and sticky sauce.

Serve: Carefully transfer the glazed chicken bites to a serving platter. For a colorful and appealing presentation, garnish with chopped green onions and a sprinkle of sesame seeds. Serve immediately for maximum crispiness and enjoy your flavorful creation!
