Ingredients

4 large flour tortillas

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 cup roasted Hatch green chiles, diced

1/2 cup cooked black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons vegetable oil (for frying)

Sour cream, for serving

Salsa, for serving

Lime wedges, for garnish

Instructions

Prepare the Filling: In a mixing bowl, combine the shredded Monterey Jack cheese, shredded sharp cheddar cheese, diced roasted Hatch green chiles, drained black beans, and chopped cilantro. Sprinkle in the ground cumin, garlic powder, onion powder, salt, and pepper. Stir thoroughly until all ingredients are evenly mixed and coat each ingredient with the spices.

Assemble the Quesadillas: On a clean, flat surface, lay out one flour tortilla. Generously spoon the cheese and Hatch chili mixture onto one half of the tortilla, ensuring to leave a bit of space around the edges to prevent overflow. Carefully fold the unfilled half over the filling to form a half-moon shape. Press down gently to flatten it slightly. Repeat this assembly process for the remaining tortillas and filling until you have a stack of filled quesadillas.

Heat the Oil: In a large skillet, add 1 tablespoon of vegetable oil and heat it over medium heat until shimmering. Gently place one quesadilla in the skillet. Cook for about 3-4 minutes until the bottom turns a rich golden brown and becomes crispy. Using a spatula, carefully flip the quesadilla over to cook the other side, adding the remaining tablespoon of oil if necessary. Continue cooking for an additional 3-4 minutes, ensuring the second side is also golden and crispy.

Repeat: Once cooked, transfer the quesadilla to a plate lined with paper towels to absorb any excess oil. Continue this process with the rest of the quesadillas, frying them one at a time until all are crispy and golden.

Slice and Serve: After frying all the quesadillas, use a sharp knife to slice them into wedges. Serve immediately while hot, alongside dollops of sour cream, bowls of salsa, and lime wedges for that perfect zesty touch. Enjoy the delightful crispy, cheesy goodness!
