Crispy Halloumi Taco Lettuce Wraps

250g halloumi cheese, sliced into strips

1 tablespoon olive oil

1 teaspoon smoked paprika

¼ teaspoon garlic powder

¼ teaspoon cayenne pepper (optional, for a spicy kick)

Salt and black pepper, to taste

8 large leaves of romaine or butter lettuce

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

½ cup corn kernels (fresh, canned, or frozen)

½ red onion, finely chopped

Fresh cilantro, for garnish

Lime wedges, for serving

½ cup salsa or pico de gallo, for topping

Instructions
 

Preheat the Oven: Set your oven to a low temperature of 200°F (95°C). This will keep your crispy halloumi warm while you put together the wraps.

    Prepare the Halloumi: In a mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Add the halloumi strips to the bowl and toss thoroughly until they're evenly coated in the spice mixture.

      Cook the Halloumi: Heat a non-stick skillet over medium-high heat. Once hot, carefully add the halloumi strips to the skillet. Cook for about 2-3 minutes on each side, or until they turn golden brown and develop a crispy texture. After cooking, remove them from the skillet and transfer to the oven to keep warm.

        Assemble the Wraps: Take a large lettuce leaf and lay it flat on a plate. Add a few slices of avocado in the center, followed by a spoonful of corn, halved cherry tomatoes, and a sprinkle of finely chopped red onion. Top the veggies with 2-3 pieces of the crispy halloumi.

          Top and Garnish: Drizzle a spoonful of salsa or pico de gallo over the halloumi. Finish off with a sprinkle of fresh cilantro and a squeeze of lime juice to enhance the flavors.
