1 teaspoon salt

1 cup crumbled feta cheese

1/2 cup all-purpose flour (or gluten-free flour, as preferred)

2 large eggs

1/4 cup finely chopped fresh dill (or parsley for a different flavor)

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for a kick)

Prepare the Zucchini: Begin by grating the zucchinis using either a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel and sprinkle it evenly with salt. Let it rest for about 10-15 minutes to allow the salt to draw out excess moisture.

    Squeeze Out Moisture: After letting the zucchini sit, gather the corners of the towel and twist it to squeeze out as much liquid as possible. The drier your zucchini is, the crispier your fritters will become!

      Combine Ingredients: In a large mixing bowl, combine the drained zucchini with crumbled feta cheese, flour, eggs, chopped dill, minced garlic, black pepper, and crushed red pepper flakes, if desired. Mix well until all ingredients are fully incorporated; the mixture should be thick and cohesive.
