Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to spice preference)

Salt and pepper, to taste

1 cup buttermilk (or a dairy-free alternative)

1 cup buffalo sauce (plus extra for serving)

8 small corn tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

½ cup diced tomatoes

½ cup ranch dressing (store-bought or homemade)

Fresh cilantro, for garnish

Instructions

Prepare the Cauliflower: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper for easy cleanup. In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until evenly combined.

Set Up a Dipping Station: Prepare your work area by pouring buttermilk into a medium bowl. In a separate bowl, place the panko breadcrumbs, which will give the cauliflower its crunchy texture.

Coat the Cauliflower: Take each cauliflower floret and first dip it into the prepared flour mixture, ensuring to shake off any excess. Next, immerse the floret in the buttermilk to coat it thoroughly, and finally, roll it in the panko breadcrumbs until well-coated. Place the coated florets on the lined baking sheet in a single layer.

Bake the Cauliflower: Lightly spray the coated cauliflower with cooking spray or drizzle with olive oil for added crispiness. Bake in the preheated oven for about 25-30 minutes, flipping the florets halfway through baking, until they are golden brown and crispy.

Toss in Buffalo Sauce: Once the cauliflower is perfectly baked, transfer it to a large bowl and pour in the buffalo sauce. Toss the florets gently until they are evenly coated with the sauce. Return them to the oven for an additional 5 minutes to help set the sauce.

Warm the Tortillas: While the cauliflower is baking for the second time, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or wrap them in foil and place them in the oven to warm through.

Assemble the Tacos: After the cauliflower is ready, begin assembling your tacos. Place an ample amount of crispy buffalo cauliflower into each warm tortilla. Top with shredded lettuce, slices of avocado, and diced tomatoes. Finish with a generous drizzle of ranch dressing.

Garnish and Serve: Finish your tacos by sprinkling fresh cilantro over the top for an extra burst of flavor. Serve with additional buffalo sauce on the side for those who crave a little more heat!

                  Prep Time: 20 minutes | Total Time: 1 hour | Servings: 4
