2 large eggs

½ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

Reduce the Cider: In a medium saucepan, pour in the apple cider and bring it to a rolling boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the volume reduces to approximately ½ cup. Remove from heat and allow it to cool slightly.

    Preheat the Oven: While the cider is simmering, preheat your oven to 350°F (175°C). Prepare a donut pan by greasing it thoroughly with cooking spray or butter to ensure easy release.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Mix thoroughly until all ingredients are evenly distributed.

        Mix Wet Ingredients: In a separate bowl, whisk the eggs until frothy. Then, add the reduced apple cider, unsweetened applesauce, vegetable oil, and vanilla extract. Mix until the mixture is smooth and homogenous.
